I look forward to lunchtime in my workplace for one reason. Gina. She is my food soulmate. (An example of how weirdly in-sync we are...today we each brought a whole mango to use in our respective lunches.) And she can brew one killer pot of chai tea with the office microwave and a thermal carafe.
We've concocted some really great meals using eachother's leftovers, fresh produce, and the odd condiment. Today, she contributed quinoa to my salad of romaine, mango, black beans, grape tomatoes, cucumber, cilantro, and feta. I dressed it with some lemon and a few dashes each of Gina's olive oil and Tabasco. Sounds like a strange combo but it was delicious, with a kick! Yeah, teamwork!
My salad was filling, but I'm already looking forward to my snack. Maybe just because the peanut butter packet is so stinking cute! It's a single serving in a foil packet, made by Justin's Nut Butter in Boulder, CO. Yummy.
I'm off to refill my water bottle and finish out the work day. Enjoy the rest of your Tuesday!
